100% Chain of Custody
Established in the 1920s, Zalmari Estate is managed by fourth-generation producer Cecilia Genis alongside her mother, Marigold Murray. Together, they oversee every step of cultivation and processing on their historic 100-hectare estate. By maintaining direct oversight from their micro-region wet mill through international export, Cecilia and Marigold ensure 100% direct-trade transparency and a seamless chain of custody from farm to cup.
Terroir & Taste
Nestled between volcanic mountain ranges, Zalmari benefits from leguminous shade trees and cool evening temperatures that slow bean ripening, locking in rich, full-bodied flavors. Honey processing leaves natural fruit sugars on the bean during drying, enhancing its inherent sweetness. Developed into a smooth medium-dark roast, Orosi opens with an inviting sweet aroma and unfolds with complex layers of warm caramel, dark chocolate, roasted hazelnut, and subtle vanilla spice.
